Fantastic T bones almost too big to eat and very tasty

I purchased two steaks, expecting them to be the same quality, however they were not. One of the steaks was lovely, but the second one was tough and there was a lot of sinew running throughout one side, which meant only half the steak was eaten. This steak also did not have a centre bone to make the 'T'-shape, but was a thin, cartilage-like material. It was a shame because the other one was so tasty.
