Mme Dupont kindly gave me the recipe for this famous Gascon dish years ago. Unfortunately, most British duck breasts are too thin to produce anything like the real thing. But Reilly & Sons' Barbary duck breasts are an exception and produced a wonderful meal. Many thanks!
